Ro-Tel Chicken Recipe

This recipe came from a co-worker at a potluck Halloween luncheon. It was Yummmm!

3 boneless, skinless chicken breasts
1 can Ro-Tel tomatoes
1 can cream of chicken soup
1 lb. Velveeta cheese
1 med. onion, chopped (or 2 Tbs. dried minced onion)
1 pkg. Doritos (we usually use ¾ of the bag)

Bake or boil the chicken and cut it up into bite-size pieces. In a saucepan, slowly heat the tomatoes, soup and cheese.

In a 9x13-inch pan, put 1 layer chicken, 1 layer chopped onions, 1 layer Doritos. Pour cheese-and-soup mixture over the top. Bake at 375 degrees for 20-30 minutes.

Shot and Chaser

I did it! Today I braved a shot of wheat grass and am forever grateful to the Jamba Juice employee (Alexa) who recommended the orange juice shot as a chaser over an orange wedge. I'm not sure why today was such a momentous day. Wheat grass is something I've wanted to try for a while, but haven't dared do - kind of like my purchasing soy milk and hesitance to drink. (Thanks, Renee , for the recent soy smoothie introduction!) All I can say now is wow, wheat grass - talk about fresh!
