Could Be a Recipe for Disaster

Anyone who knows me, I mean really knows me, knows that jello and I do not play well together. My jello usually turns out too soft or too firm or too runny or too not-jelloy. Don't ask me how it happens. It must be a trade secret. But, I came across this recipe and thought I might try it. How badly could I mess it up? It doesn't even have to set.

1 container Cool Whip, 8 oz.
1 container small curd cottage cheese, 16 oz.
1 small box orange jello (can use sugar free or other flavors)
1 large can crushed pineapple, 20 oz., well drained
1-2 can mandarin oranges, well drained (to taste)

Gently combine cool whip, cottage cheese, drained pineapple, and dry jello powder in a large bowl. Gently stir in mandarin oranges, reserving some for garnishing if desired.Garnish with mandarin oranges. Chill well before serving.

This is a staple in my house! Our family makes this all the time, and when I married Micah it was named...we call it Mungi Jello(don't ask why.) You can also change up your flavor...we do strawberry jello with real strawberries cut up in it same with rasberries etc. It is so easy and so good! You can't mess it up! :0) Just a thing I do...I always mix the jello and cottage cheese first then fold in the coolwhip and add the fruit the last few folds. It seems to not be so runny. Enjoy!

Shot and Chaser

I did it! Today I braved a shot of wheat grass and am forever grateful to the Jamba Juice employee (Alexa) who recommended the orange juice shot as a chaser over an orange wedge. I'm not sure why today was such a momentous day. Wheat grass is something I've wanted to try for a while, but haven't dared do - kind of like my purchasing soy milk and hesitance to drink. (Thanks, Renee , for the recent soy smoothie introduction!) All I can say now is wow, wheat grass - talk about fresh!

Memories

Oliver, I remember how small you were. How you whined and cried when you were left alone in your box/kennel while you were being house trained. I remember how you took to Cambridge, wanting to be with him everywhere.
